Ingredients: 2 cups cooked brown rice; 1 cup cooked lentils; 2 cups roasted broccoli; 2 cups roasted cauliflower; 2 cups roasted sweet potatoes; 2 cups shredded kale (recommend massaging it with a little salt, lemon juice, and extra virgin olive oil); 1/2 cup sliced scallions; 1/2 cup dried cranberries; 1 cup kimchi; 1 cup pepitas; 1 avocado, chopped; 1 pound of salmon - pan-fried or BBQ'd on a grill; Yumm sauce! (Alternatively, Green Goddess dressing can be used); We recommend cooking some of these in advance or making extra from another dinner/lunch during the week for convenience.
